Pasta with a Basil and Tomato Sauce |

Ingredients
2 tsp Olive Oil 1 sprig of Rosemary or 1 tsp dried Rosemary 1 Clove of Garlic 225g/8oz tomatoes, halved 2 tsp sun-dried tomato paste 6 fresh basil leaves Salt & Pepper 175g/6oz dried farfalle pasta
Place the tomatoes, skin side up in a shallow roasting tin, drizzle over the oil and add the rosemary and garlic. Cook under a medium grill for 20 minutes, until the tomato skins are slightly charred. Peel the skin from the tomatoes. Roughly chop the tomato flesh and place in a saucepan. Squeeze the pulp from the cooked garlic clove and mix with the tomato and sun-dried tomato paste. Tear the basil leaves and stir them into the sauce. Season to taste. Cook the pasta according to instruction on the packet, drain. Gently heat the sauce through and serve with the pasta.
