Ingredients
198g can of tuna in brine, drained and flaked 425g can chick peas, drained 1 green pepper, seeded and sliced 2 large tomatoes, chopped ¼ mild onion, peeled and finely sliced 1 tsp capers (optional) 4 dried apricots, chopped 8 black olives, stoned and halved 3 tbsp reduced calorie mayonnaise 1 tsp fresh chives, snipped salt & pepper
Put the tuna, chick peas, green peppers, tomatoes, onion, capers, apricots and olives in a serving bowl. Mix together well.
Fold in the mayonnaise, chives and season to taste.
