Ingredients
225g/8oz tricolour pasta twists 1 tbsp olive oil 1 onion, peeled and cut into wedges 1 red pepper, seeded and sliced 125g/4oz broccoli, cut into small florets small bunch of radishes, trimmed and quartered 125g/4oz mangetout 142g packet of Boursin cheese with garlic 142ml carton single cream 4 tbsp milk salt and pepper
Cook the pasta twists in a large pan of salted boiling water for 10 minutes, drain. Heat the oil in a large frying pan, add the onion and cook gently for 5 minutes. Add the red pepper and broccoli and stir fry for 5 minutes. Add the radishes and mangetout and continue cooking for 1 minute. Stir in the pasta.
Beat together the Boursin cheese, cream and milk until smooth. Pour over the vegetables and stir through to coat.
Season to taste.
