Ingredients
Prep time: 10 minutes plus 2 hours marinating.
20 chicken thigh portions 2 tbsp sugar 2 tbsp salt 1 tbsp ground ginger 1 tbsp mustard powder 1 tbsp curry powder 50g/2oz butter 150ml/5 fl oz tomato ketchup 1 tbsp curry sauce 2 tbsp soy sauce
Place the chicken portions on a board. Mix the sugar, salt, ginger, mustard and curry powder together. Rub well into the surface of the chicken. Leave for 2 hours. Arrange the chicken on a grid in 2 roasting pans. Melt the butter and brush all over the chicken. Bake in a preheated moderately hot oven, 200°C, 400°F, gas mark 6, for 30 minutes, until golden brown. Mix the ketchup and sauces together and brush over the chicken portions. Return to the oven for 10 minutes. Arrange on a warmed serving dish and serve immediately.
