Ingredients
600ml natural low-fat yogurt 1 tbsp clear honey 125g/4oz no-soak dried apricots, finely chopped 11g/0.4oz sachet gelatine 2 egg whites sprigs of mint to decorate
Pour the yogurt into a bowl and stir in the honey. Fold in the chopped apricots, reserving a few for decoration. Measure 2 tbsp cold water into a cup and sprinkle the gelatine onto the surface. Stand the cup in a pan of gently simmering water and heat until the gelatine has melted. Stir the gelatine into the yogurt. Chill until just starting to set. In another bowl whisk the egg whites until they stand in soft peaks then fold into the yogurt mixture. Spoon into 4 individual glasses and chill until set. Serve each mousse sprinkled with the reserved apricots and a sprig of mint.
